- Goat cheese7 oz
- Green olives5½ oz
- Olive oil4 tbsp
- Lemon zestfrom half a lemon
- Thymea few sprigs
- Red pepper flakesa pinch
Method

- Warm the olive oil gently with the thyme sprigs and red pepper flakes for 2 minutes. Do not let it sizzle — you are infusing it, not frying anything.
- Take it off the heat and stir in the lemon zest, which goes in off the heat or it turns bitter.
- Drain the olives well and tip them into the warm oil.
- Leave to cool to room temperature, then refrigerate for at least an hour and ideally overnight.
- Crumble the goat cheese into rough pieces over a plate and spoon the olives and their oil around it.
- Bring it back to room temperature before eating — fridge-cold, the oil sets cloudy and the cheese tastes of nothing.
