Method

- Finely dice the red onion and cover it with the lime juice while you deal with the avocados. Ten minutes in acid takes the raw burn out of it.
- Halve the avocados and scoop them into a bowl.
- Mash with a fork, not a blender, and stop while it is still lumpy. Smooth guacamole is a dip; lumpy guacamole is food.
- Fold in the onion with its lime juice, the cilantro, and a good pinch of salt.
- Taste and add more lime — under-acidic guacamole tastes flat and it is almost always the thing missing.
- Press plastic wrap directly onto the surface if it is waiting, and serve with the pork rinds for scooping.
