- Run a vegetable peeler down the length of the cucumber on all four sides to make long ribbons. Toss with the salt in a colander and let drain 10 minutes — the cucumber will release a surprising amount of water.
- Whisk the sesame oil, soy sauce, rice vinegar and erythritol together until the erythritol dissolves.
- Squeeze the cucumber gently to remove excess water. Toss with the dressing, then top with the chili crisp and sesame seeds.
