- Olive oil1½ fl oz
- Fresh thymea few sprigs
- Garlic¾ oz
- Balsamic vinegar1 tsp

Method

- Preheat the oven to 425F. Halve any large radishes; leave small ones whole.
- Toss the radishes with the olive oil, salt and pepper on a sheet pan. Spread cut-side down.
- Roast 18 minutes, until the edges are golden and the centers pierce easily. Add the smashed garlic and thyme sprigs for the last 3 minutes so the leaves crisp.
- Off the heat, drizzle with balsamic and serve warm.
