  • Walnuts1¾ oz
  • Heavy cream2½ fl oz
  • Unsweetened almond milk10 fl oz
  • Powdered erythritol¼ oz
  • Cinnamon stickone, plus ground cinnamon to finish
  • Vanilla extracthalf a teaspoon
  • Sea salta good pinch

Method

  1. Toast the walnuts in a dry pan until they smell nutty, then rub them in a kitchen towel to shed some of the skins.
  2. The skins are where the bitterness lives, and shedding half of them is the difference between rich and tannic.
  3. Blend them with the almond milk for a full minute, then strain through a fine strainer.
  4. Warm that with the cream, the cinnamon stick, erythritol and salt to just below a simmer.
  5. Do not boil it. Nut milk and cream both catch on the base and the burnt taste is unrecoverable.
  6. Take the cinnamon stick out, froth it with a whisk, and grate more cinnamon over the top.
