Drink
Coconut matcha frappé
The only blended iced drink here that is not a smoothie — coconut cream gives it the body that milk usually provides, and matcha carries caffeine without the acidity of cold brew.

Method

- Sift the matcha. Clumps do not blend out — they end up as bitter green specks on the last mouthful.
- Whisk it into two tablespoons of warm water first, at about 175F.
- Boiling water on matcha is what makes it taste like grass, and no amount of sweetener afterwards covers it.
- Blend that with the coconut cream, almond milk, erythritol, vanilla and salt.
- Add the ice and blend 30 seconds only. Longer and the ice melts into it and you have a thin green drink instead of a thick one.
- Pour it immediately — it separates within a couple of minutes and never comes back together the same.
