Method

  1. Add the wings to the picked carcass. A bare carcass on its own gives color and very little body.
  2. Cover with cold water and bring it up slowly. Started hot, the proteins seize and the broth clouds.
  3. The spoonful of vinegar goes in at the start, where it helps draw the minerals out of the bones.
  4. Skim the gray foam off during the first twenty minutes, and then stop looking at it.
  5. Four hours at a bare tremble. A rolling boil emulsifies the fat and makes it greasy rather than rich.
  6. Strain it, chill it overnight, and lift the set fat off the top. The lemon and thyme go into the mug, not into the pot.
