  • Fresh sagefour leaves

Method

  1. Crush the blackberries with the erythritol and leave them 30 minutes. The fruit gives up its juice on its own and no heat is needed.
  2. Bruise the sage and add it for the last 10 minutes only. Left in from the start it turns the whole thing medicinal.
  3. Stir the vinegar in at the end rather than the beginning, so it stays sharp instead of cooking into the fruit.
  4. Strain it through a strainer, pressing the pulp gently. Pressed hard, it goes cloudy.
  5. This syrup keeps two weeks in a jar in the fridge and gets rounder after a few days.
  6. Two tablespoons per glass over ice, topped with sparkling water. Start there and adjust — a shrub should make you blink.
