- Dried hibiscus flowers½ oz
- Granulated erythritol½ oz
- Fresh minta small bunch
- Limea squeeze
- Waterabout 3 1/2 cups for the batch

Method

- Steep the hibiscus in water just off the boil for 10 minutes, no longer. Past that it turns astringent and dries the mouth.
- Stir the erythritol in while it is hot. It will not dissolve once the tea is cold.
- Add the mint only after the tea comes off the heat, and take it out before it goes in the fridge.
- Strain it and cool it completely before it meets ice, or the ice melts and waters it down.
- It is already sharp, so the lime is optional in a way it is not in most of these.
- Keeps three days in the fridge and the color holds, which is unusual for an infusion.
