Blueberry and mint kefir

Kefir is thinner and sharper than yogurt and carries fruit without needing to be sweetened, which is not true of most things you can drink cold.

Ingredients

For the whole dish · serves 2

  • Whole milk kefir10 fl oz
  • Blueberries1¾ oz
  • Fresh minta few leaves
  • Lemona squeeze
  • Icea handful

Method

6 steps · 10 minutes

  1. Check the label for added sugar. Plain kefir has a little lactose and nothing else, and the flavored kind has a great deal more.
  2. Crush the blueberries with the back of a spoon rather than blending them, so it stays a drink with fruit in it.
  3. Bruise the mint between your palms first. Chopped mint goes black and tastes of the board.
  4. Stir the kefir in gently. Whisked hard it thins out and separates.
  5. Over ice, with the lemon last.
  6. Drink it within a few minutes. Left standing, the fruit sinks and the kefir starts to split.
