  1. Read the peanut butter label. Anything past peanuts and salt puts this well past the figures above.
  2. Blend the cocoa with a splash of the almond milk into a paste first. Cocoa tipped into a full blender clumps and never fully disperses.
  3. Add everything else and blend for 30 seconds, no longer. Cream over-blended with ice turns grainy.
  4. The pinch of salt is what makes the chocolate taste of chocolate rather than of cocoa.
  5. Taste before sweetening, and sweeten last. The peanut butter is doing more of that job than you expect.
  6. Serve it immediately. It separates within a few minutes and does not come back together.
