  • Blueberries5½ oz
  • Granulated erythritol½ oz
  • Lemon1
  • Green tea leaves or bagsfour teaspoons or four bags
  • Fresh minta few sprigs
  • Waterabout 4 cups
  • Iceplenty

Method

  1. Let the boiled water stand 3 minutes before it touches the tea. Green tea wants about 175F and not a degree more.
  2. Steep 3 minutes and take the leaves out. Left in, it turns astringent as it cools and no amount of fruit hides it.
  3. Crush the blueberries with the erythritol while the tea is still hot, and stir them in.
  4. The erythritol has to go in hot. It will not dissolve once this is cold and it sits as grit at the bottom.
  5. Cool it completely before it meets ice, then strain and add the lemon and mint.
  6. Keeps two days. After that the tea goes flat and the fruit takes over completely.
