Method

  1. Roast the bones at 425F for 30 minutes first. Unroasted, the broth is pale and tastes of very little.
  2. Tip them into a large pot with the onion, bay, peppercorns and vinegar, and cover with cold water by about 2 inch.
  3. The vinegar is not for flavor — it draws the minerals out of the bone, and a tablespoon is enough that you will never taste it.
  4. Bring it slowly to the barest simmer and skim off the gray foam that rises in the first twenty minutes. Skipping this leaves the broth cloudy.
  5. Hold it at a tremble for 8 hours. A rolling boil emulsifies the fat into the liquid and makes it greasy rather than clear.
  6. Strain, cool, and lift the set fat off the top the next day. Salt it in the cup rather than the pot, so the same batch can season a stew later.
