  • Minta few leaves

Method

  1. Brew the tea in water that has come off the boil and stood a minute. Boiling water on green tea makes it bitter, and iced tea has nowhere to hide that.
  2. Steep 3 minutes and lift the bags out without squeezing them.
  3. Stir in the erythritol while the tea is still hot — it will not dissolve once cold.
  4. Crush the raspberries with the lime juice and stir them through, then cool the whole thing completely before it meets ice.
  5. Strain if you object to pips, add the mint, and pour over ice.
  6. It keeps a day in the fridge, and the raspberry color deepens overnight.
