Method

  1. Slice the ginger thinly rather than grating it. Grated, it clouds the water and you drink the fibers.
  2. Simmer the slices in the water for 5 minutes — ginger needs real heat and time, and steeping alone gets almost nothing out of it.
  3. Take it off the heat before the mint goes in. Boiled mint turns bitter and grassy within a minute.
  4. Add the mint and the lemon juice, cover, and leave it 3 minutes.
  5. Strain into a mug. Keep the ginger slices and reuse them once — the second cup is milder but still worth it.
