- Preheat the oven to 400F. Squeeze the sauerkraut dry in a clean towel, then chop it fine.
- Mix the sauerkraut with the grated Swiss and the caraway seeds. Divide into 4 portions and press each onto a parchment-lined sheet pan into a thin disc.
- Bake 12 minutes until the edges are golden and the cheese has set.
- Cool for 2 minutes on the pan so they crisp, then lift off with a spatula. Serve warm.
