  • Spinach11 oz
  • Toasted sesame oil2 tsp
  • Tamari2 tsp
  • Sesame seeds¼ oz
  • Garlic clovesone, grated
  • Scallionsone, finely sliced

Method

  1. Bring a large pot of water to a boil and blanch the spinach for 30 seconds, just until it wilts.
  2. Drain it and run it under cold water, then squeeze it hard in your hands, a fistful at a time, until no more water comes out.
  3. Cut the squeezed spinach into short lengths and loosen it with your fingers.
  4. Toss it with the sesame oil, tamari, garlic and scallion, and scatter the sesame seeds over. Serve cold or at room temperature.
