- Greek yogurt2 oz

Method

- Cut the zucchini lengthwise into planks about half an inch thick and brush them with the oil.
- Heat a grill pan or heavy skillet over high heat until it smokes, then lay the planks in and leave them for 3 minutes, until charred in stripes. Turn and give them 2 minutes more.
- Salt them only once they come off the heat. Salted first, they weep and steam instead of charring.
- Stir the garlic and a pinch of salt into the yogurt and spread it on a plate.
- Lay the warm zucchini over the yogurt and finish with torn mint and the lemon zest.
