  • Cucumber5½ oz
  • Cherry tomatoes3 oz
  • Kalamata olives1 oz
  • Red onion½ oz
  • Olive oil1½ tbsp
  • Apple cider vinegar2 tsp
  • Dried oreganoa big pinch
  • Sea saltto taste

Method

  1. Halve the cucumber lengthwise and cut it into thick half-moons. Halve the tomatoes and slice the onion as thinly as you can.
  2. Put the onion in the bowl first with the vinegar and a pinch of salt, and leave it for 5 minutes. It softens the raw bite without cooking it.
  3. Add the cucumber, tomatoes and olives, then the oil and oregano, crumbling the oregano between your fingers.
  4. Toss and serve within half an hour, before the salt draws the water out of the cucumber.
