Method

- Cook the bacon, chopped, slowly in a large pot until crisp. Lift it out onto paper and leave the fat behind.
- Add the butter, onion and garlic and soften them for 5 minutes without letting them brown.
- Add the cauliflower, broken into small florets, and the broth. Cover and simmer for 15 to 20 minutes, until a knife slides through the thickest stem.
- Take the pot off the heat and blend until completely smooth, then blend in the cream and mustard.
- Grate the gouda and stir it in a handful at a time, still off the heat. Boiled after the cheese goes in, the soup turns grainy.
- Taste for salt, which depends on the broth, and serve with the bacon crumbled over the top.
