Method

- Heat the oven to 400F. Stir the almond flour, psyllium and salt together, then work in the egg and oil until it comes together as a soft dough. Leave it 5 minutes: the psyllium keeps absorbing, and it goes from sticky to rollable while it sits.
- Press it out between two sheets of parchment to about a quarter inch thick, peel off the top sheet, and bake for 12 minutes, until dry and set.
- Wilt the spinach in a dry pan for 2 minutes, then squeeze it out firmly and chop it. Wet spinach on a white pizza leaves a puddle where the cheese should be.
- Stir the ricotta with the garlic, lemon zest and a pinch of salt, spread it over the base, and top with the spinach and mozzarella.
- Bake for 10 minutes more, until the mozzarella is melted and blistered in places.
