Method

- Heat the oven to 400F. Ask the fish counter to gut the fish but leave the scales on — they stop the salt reaching the flesh.
- Stuff the cavity with the fennel fronds and a slice of lemon.
- Mix the salt with the egg white and a splash of water until it holds together like wet sand. Too loose and it will not set into a shell.
- Spread a bed of salt on a baking sheet, sit the fish on it, and pack the rest over the top, sealing it completely except for the tail.
- Bake 25 minutes for fish this size. There is no way to check without breaking the crust, so trust the clock — 25 minutes per 400 g.
- Crack the crust with the back of a knife and lift it away in pieces. Brush every grain off before lifting the fillets, and dress them with oil and lemon.
