Method
5 steps · 20 minutes
- Pound the garlic and chiles to a rough paste with the side of a knife. Mix the fish sauce, tamari and erythritol in a small bowl.
- Heat 1 tbsp of the coconut oil in a wok or wide pan over high heat. Crack the eggs in one at a time and fry them sunny-side up until the edges are crisp. Lift out onto a plate.
- Add the rest of the oil to the pan. Tip in the chile-garlic paste and stir for 15 seconds, then add the chicken. Break it up with a spoon and cook hard for 4 minutes, until the meat caramelizes at the edges.
- Pour in the sauce and toss for 30 seconds until everything is glossy. Off the heat, fold in the basil leaves; they will wilt in seconds.
- Divide the chicken between four bowls, top each with a fried egg, and serve with a lime wedge to squeeze over.
