- Heavy cream2 fl oz
- Pecans1 oz
- Powdered erythritol¼ oz
- Vanilla extracthalf a teaspoon
- Sea salta small pinch

Method

- Toast the pecans in a dry pan until they smell of caramel, then let them cool completely before blending.
- Blend them with the cream, erythritol, vanilla and salt into a loose praline cream.
- Do not over-blend. Cream whipped by a blender turns to butter faster than seems possible.
- Strain it if you want it smooth, or leave the flecks in if you do not mind them settling.
- Pour the cold brew over ice first, then float the cream on top so it marbles down through it.
- The pinch of salt is what makes it taste like praline rather than like sweet coffee.
