Drink
Blackberry and mint agua fresca
Blended and strained rather than steeped, so it keeps the color and the fresh fruit taste that a cooked cordial loses — and it is drunk the same day for exactly that reason.

Ingredients
For the whole dish · serves 4
- Blackberries10 oz
- Granulated erythritol¾ oz
- Lime2
- Fresh minta large bunch
- Waterabout 4 cups for the pitcher
- Sea salta pinch
- Iceplenty
Method
6 steps · 10 minutes
- Blend the blackberries with the water and erythritol for 20 seconds only. Longer breaks the seeds and turns it bitter.
- Strain it through a fine strainer, pressing gently rather than forcing it.
- Bruise the mint between your palms and drop it into the pitcher whole. Blended in, it goes grassy and dark.
- Lime and the pinch of salt stirred in, then chill it an hour with the mint in.
- Take the mint out before serving. Left in past a few hours it turns the whole thing bitter.
- Over plenty of ice. It is a same-day drink — by tomorrow the color has gone brown at the edges.
