- Heavy cream9½ fl oz
- Blackberries7 oz
- Greek yogurt4 oz
- Granulated erythritol1½ oz
- Lemona squeeze
- Vanilla extracthalf a teaspoon
Method

- Blend the erythritol to a powder first, or the crystals stay whole in a mixture that never gets warm.
- Crush three quarters of the blackberries with the lemon and half the sweetener, and press them through a strainer if you object to pips.
- Whip the cream with the rest of the sweetener and the vanilla to soft peaks. Stop while it still folds; whipped stiff, it will not ripple.
- Fold the yogurt through to slacken it.
- Add the crushed berries and turn the spoon through twice. Twice, not more — fully mixed it becomes a uniform mauve and loses the point.
- Spoon into glasses with the remaining whole berries on top and chill an hour.
