  • Greek yogurt13 oz
  • Heavy cream4 fl oz
  • Mixed berries5½ oz
  • Sliced almonds1 oz
  • Powdered erythritol¾ oz
  • Vanilla extract3 tsp

Method

  1. Use powdered erythritol rather than granulated. Granules do not dissolve in cold yogurt and stay gritty right through freezing.
  2. Whip the cream to soft peaks and fold the yogurt into it, rather than the other way round.
  3. Spread it about 1/2 inch thick on a lined sheet. Thinner and it snaps into shards, thicker and it has to be bitten.
  4. Press the berries into the surface instead of scattering them on top, so they do not fall off when it breaks.
  5. Three hours in the freezer, then snap it into pieces by hand.
  6. Back into the freezer in a bag straight away. It softens within a couple of minutes out of it.
