  • Fried tofu pouches5½ oz
  • Riced cauliflower8½ oz
  • Dashi8 fl oz
  • Soy sauce1½ tbsp
  • Rice vinegar2 tbsp
  • Powdered erythritol½ oz
  • Toasted sesame seedsa tablespoon
  • Fresh gingera thumb, grated

Method

  1. Pour boiling water over the pouches and drain them. That strips the old frying oil and is why the seasoning gets in at all.
  2. Roll a chopstick firmly across each pouch before you cut it open — that separates the walls, and a pouch cut cold tears down one side.
  3. Simmer them in the dashi, soy and erythritol for 10 minutes, then let them cool in the liquid.
  4. Cook the riced cauliflower dry in a hot pan for 3 minutes to drive the water off, then season it with the vinegar and ginger.
  5. Squeeze each pouch gently and fill it about two-thirds full. Packed tight they split as you fold them.
  6. Fold the opening under, sit them seam-down, and finish with sesame seeds. They keep a day in the fridge.
