- Wash the beans early and dry them completely. A wet bean steams and never blisters.
- Get a heavy pan properly hot with the oil, then put the beans in and leave them.
- Turn them once after 3 minutes, once more after 2, and stop when they are brown in patches and starting to wrinkle.
- Garlic and pepper flakes go in for the last 30 seconds only — sliced garlic burns bitter in a pan this hot faster than you can lift it out.
- Off the heat, the lemon juice into the pan so it hisses and lifts everything off the base.
- Flaky salt at the last moment. Salted early they weep, and that water is what stops the blistering.
