Method

  1. Take the tuna out of the fridge 15 minutes ahead. Fridge-cold tuna cooks through before the outside has colored, which defeats the point.
  2. Toast the sesame seeds in a dry pan until they smell nutty, about 90 seconds, and tip them out before they burn.
  3. Blanch the beans in salted boiling water for 3 minutes, then drain them well.
  4. Get the pan very hot. Rub the tuna with half the sesame oil, season it, and sear 60–90 seconds a side — no longer. The center should stay ruby.
  5. Rest the tuna on a board while you toss the beans in the pan with the tamari and the rest of the sesame oil.
  6. Slice the tuna thickly against the grain, pile the beans alongside and scatter the toasted seeds over both.
