Method

- Mix the turkey with the egg, half the grated parmesan, the grated garlic and a good teaspoon of salt. Work it for a minute until it turns tacky.
- Roll into 16 balls slightly smaller than a golf ball, wetting your hands to stop them sticking.
- Brown them in the oil over medium-high heat, turning until colored on all sides — about 6 minutes. They do not need to be cooked through yet.
- Lift them out, drop the heat to low and pour in the cream, scraping the base.
- Return the meatballs, cover, and simmer gently for 12 minutes until firm and cooked through.
- Take the pan off the heat before adding the torn basil and the rest of the parmesan — boiled basil turns black and tastes of nothing.
