Method

- Heat the oven to 400F. Pull off any gray membrane from the monkfish — it shrinks in the heat and tightens the flesh into a curl.
- Lay the pancetta slices overlapping on a board, set the fish across them with the rosemary, and roll it up tightly.
- Sear the parcel in the oil in an ovenproof pan, turning until the pancetta is colored on all sides. About 4 minutes.
- Transfer the pan to the oven for 10 minutes.
- Rest it 5 minutes before slicing into thick rounds. Cutting it hot pushes the juices out.
- Squeeze the lemon over and grind pepper on. No salt — the pancetta has done that.
