Method

  1. Check the fillets for pin bones by running a thumb down the center line, and pull any you find with tweezers.
  2. Salt them and leave 10 minutes, then pat dry.
  3. Fry skin-side down in the butter over medium-high heat for 3 minutes, pressing them flat for the first few seconds so they do not curl.
  4. Turn and give them 1 minute more. Herring is thin and goes from done to dry quickly.
  5. Mix the sour cream, mustard and most of the dill in a bowl — this is served cold against the hot fish, which is the point of it.
  6. Spoon it alongside rather than over, so the skin stays crisp, and scatter the last of the dill.
