Method

- Buy it frozen and thawed if you can. Freezing breaks down the muscle and does for free what an hour of tenderizing does badly.
- Sit the octopus in a heavy pan that it just fits, with the oil, garlic and bay. Add no water — it releases plenty of its own.
- Bring it to the barest simmer, cover, and leave it 90 minutes. It should never boil; boiling tightens octopus and it does not come back.
- Test it at 75 minutes by pushing a knife into the thickest part of a tentacle. It should go in with no resistance at all.
- Lift it out and cut into thick pieces on the diagonal.
- Season, squeeze the lemon over, and spoon the cooking oil on. Strain and keep any oil left — it is worth more than the octopus.
