Method

- Brown the lamb hard in the ghee in two batches and set it aside. This is where the color of the finished curry comes from.
- Cook the onion right down in the same fat, past soft and into sweet, a good 12 minutes.
- Add the ginger, garlic and ground spices to the fat for 30 seconds before any liquid. Spices bloom in fat and stay raw in water.
- Return the lamb with a little water, cover, and give it an hour at a bare simmer until it gives to a spoon.
- Take it off the heat before the yogurt goes in, and stir it in a spoonful at a time. Yogurt added to a boiling pan splits every time.
- Fold the spinach through the residual heat until it just collapses, then the garam masala last.
