  1. Pat the cod dry and cut into bite-sized pieces.
  2. Heat a heavy pan over medium. Cook the curry paste with the minced garlic and ginger for 90 seconds, stirring, until fragrant.
  3. Add the chopped onion and cook 2 minutes until translucent. Pour in the coconut milk and bring to a gentle simmer.
  4. Add the sliced bell peppers and simmer 4 minutes until just tender. Stir in the fish sauce and lime juice.
  5. Slip the cod into the sauce and simmer 3 minutes, gently, until the fish flakes when nudged.
