Method

- Brown the thighs skin-side down in the oil until the skin releases on its own, about 8 minutes, then turn them for 3 and lift them out.
- Mushrooms into the same fat, undisturbed, until they have given up their water and taken on some color.
- Peppers and garlic for 2 minutes, then the wine, scraping everything off the base while it boils down by half.
- Tomatoes, herbs, olives, and the chicken back on top skin side up so it stays above the sauce.
- Lid off, low oven or the gentlest simmer, 35 minutes. A lid steams the skin soft and undoes the browning you just paid for.
- Rest it 10 minutes off the heat. The sauce thickens as it settles and does not need thickening any other way.
