Method

- Marinate the thighs in the yogurt, ginger, garlic and half the garam masala for an hour if you can.
- Color them hard under a broiler or in a dry pan first, and let them blacken at the edges. That char is what a tandoor would give you and the sauce cannot replace it.
- Cook the tomato paste down in the butter until it darkens and the fat separates out, a good 15 minutes. This is the step that replaces the sugar.
- Dried fenugreek leaf is the flavor people cannot place in this dish. Crush it between your palms as it goes in.
- Cream in off the heat, then the chicken back with any juices. Boiled after the cream, it splits.
- Let it sit 10 minutes before serving. It is one of the few curries that is noticeably better after a rest.
