- Sweat the leek in the butter with a pinch of salt until soft but not colored, a full 8 minutes.
- Add the stock and bring it to a simmer, then put the broccoli stalks in first and the florets two minutes after.
- Six minutes of simmering is enough. Longer and the color goes from green to army green, and it does not come back.
- Blend it while it is hot, then let it stand off the heat for two minutes before the cheese goes anywhere near it.
- Stir the stilton and cream in off the heat. Boiling blue cheese splits it and turns the whole pot grainy.
- Taste before you reach for the salt. The cheese has usually already done it.
