- Wipe the bowl with vinegar before you start. Any trace of fat and the whites will not take, which is the usual reason meringue fails.
- Whisk the whites to soft peaks before any sweetener goes in, then add the erythritol a spoonful at a time.
- Use powdered rather than granulated. Granules will not dissolve and weep syrup out of the meringue in the oven.
- Ninety minutes at 210F, then leave it in the switched-off oven to cool completely. This is drying rather than baking.
- Erythritol meringue is softer and chewier than a sugar one and will never shatter the same way. That suits a mess perfectly and would not suit a pavlova.
