- Tempeh13 oz
- Little gem lettuce7 oz
- Sesame seeds¾ oz
- Avocado oil2 tbsp
- Fish sauce1½ tbsp
- Limetwo, juiced
- Shallotone, sliced paper thin
- Mint and cilantroa large handful of each
- Red pepper flakesto taste
Method
6 steps · 20 minutes
- Toast the sesame seeds dry until they smell nutty, then grind them coarse in a mortar. Powder is too fine — you want grit.
- Steam the tempeh 10 minutes, then crumble it.
- Fry the crumbs in the oil until they are properly crisp, 8 minutes. Larb is a texture before it is a flavor.
- Off the heat, dress with the lime and fish sauce. Hot pan, and the lime cooks and turns dull.
- Fold in the shallot, herbs, pepper flakes and most of the ground sesame.
- Spoon into lettuce cups at the last minute and put the rest of the sesame on top. Dressed early, the cups go limp.
