- Almond flour5½ oz
- Sharp cheddar7 oz
- Butter3 oz
- Eggs2
- Cayenne pepperhalf a teaspoon, at least
- Sea saltto taste
Method

- Rub the cold butter into the almond flour, then work in the grated cheddar, egg, cayenne and salt.
- It will look too crumbly and then suddenly come together. Resist adding liquid.
- Roll it between two sheets of parchment to about 1/4 inch and chill it 15 minutes.
- Cut into strips with a knife and lift them onto a lined sheet with a spatula. They will not survive being picked up by hand.
- Bake at 325F for 15 minutes. Lower than you would for a wheat dough, because almond flour and cheese both catch fast.
- Leave them on the sheet until completely cold. Warm they bend; cold they snap, which is the entire point of a cheese straw.
