Method

- Cut the halloumi into batons about the size of a thick chip, and pat every face dry.
- Leave them on paper towels for 5 minutes while the pan heats. Surface moisture is the only thing standing between this and a golden crust.
- Get the oil properly hot before they go in, and lay them down with space between.
- Fry 2 minutes a side, turning them onto each of the four long faces. Eight minutes in total and no stirring at all.
- Toss with the oregano and pepper, squeeze the lemon over, and eat within a few minutes — cold halloumi goes squeaky and tough.
