Method

- Brown the cheeks properly first, in the pot, on saute mode. Pressure cooking adds no color at all and a pale braise tastes of nothing.
- Zest only, no juice and no pith. The pith turns the whole pot bitter under pressure in a way it would not in an oven.
- Deglaze with a little stock and scrape the base completely clean before the lid goes on, or it will trigger a burn warning.
- Forty-five minutes at high pressure, then let it release naturally. A quick release tears braised meat apart.
- Lift the cheeks out and reduce the liquid hard on saute mode for 10 minutes. Nothing evaporates under pressure, so the sauce is always thin at this stage.
- Butter whisked in off the heat at the end, which is what gives it the gloss an oven braise gets for free.
