- Heavy cream14 fl oz
- Blackberries4 oz
- Granulated erythritol2 oz
- Gelatin leaves¼ oz
- Vanilla extracta teaspoon
Method

- Soak the gelatin leaves in cold water for 5 minutes until floppy, then squeeze them out hard.
- Warm the cream with the erythritol and vanilla until it steams and the sweetener has dissolved. Do not let it boil — boiled cream tastes cooked and can split.
- Take it off the heat, drop in the squeezed gelatin and whisk until it has completely disappeared.
- Pour through a strainer into four molds or glasses. The strainer catches any gelatin that did not dissolve, which is the one flaw people cannot fix later.
- Chill at least 4 hours. It should wobble when you tap it — set firm enough to stand and no firmer, or it eats like jelly.
- Crush the blackberries with a fork and a pinch of sweetener and spoon them over just before serving.
