- Heavy cream8 fl oz
- Sugar-free dark chocolate1¾ oz
- Pistachios1¼ oz
- Powdered erythritol1¾ oz
- Orangethe zest of one
- Cinnamona pinch
- Vanilla extracta teaspoon

- Drain the ricotta in a strainer lined with a kitchen towel, in the fridge, overnight. Supermarket ricotta is far wetter than the kind this was written for.
- Beat it with the erythritol, vanilla, cinnamon and orange zest until it is completely smooth. It takes longer than you expect.
- Whip the cream separately to soft peaks and fold it in. Beating cream into ricotta rather than folding gives you a grainy mixture that will not come back.
- Chop the chocolate into small shards and fold most of them through.
- Spoon into six small glasses and chill at least an hour.
- Chopped pistachios and the rest of the chocolate on top just before serving, so they stay crunchy.
