  • Ground turkey1 lb
  • Onion2 oz
  • Sageten leaves, chopped
  • Olive oil2 tbsp
  • Fennel seedsa teaspoon, crushed
  • Sea saltto taste

Method

  1. Grate the onion rather than chopping it, so it disappears into the meat instead of sitting in pockets.
  2. Mix the turkey with the onion, sage, crushed fennel seeds and a good pinch of salt. Work it briefly with your hands — overworking makes them bouncy.
  3. Fry a teaspoon of the mixture and taste it. Turkey needs more salt than you expect, and this is the only chance to find out.
  4. Shape into eight patties about 1/2 inch thick, pressing a shallow dip into the middle of each so they cook flat.
  5. Fry in the oil over medium heat for 4 minutes a side, until browned and firm in the center.
  6. Cool any you are keeping before they go in the fridge, or the steam makes them soggy.
