Method

- Cut the peppers into rings a half inch thick, from the widest part, and pull the seeds out.
- Melt the butter in a cold pan and sit the rings in it before the heat goes on, pressing them flat.
- Warm them 2 minutes so the bottom edge softens and seals against the pan. This is what stops the white running out.
- Crack an egg into each ring, season, and cover the pan.
- Three minutes for a runny yolk over low heat. High heat rubberizes the white before the yolk warms.
- Crumble the feta over off the heat, with the herbs and pepper flakes.
