  • Greek yogurt4 oz
  • Red bell pepper4 oz
  • Neutral oil4 tsp
  • Garam masalatwo teaspoons
  • Ground turmerichalf a teaspoon
  • Fresh gingera thumb, grated
  • Lemona squeeze, at the end

Method

  1. Hang the yogurt in a strainer for 20 minutes if it looks at all loose. Thin marinade slides off paneer and burns on the sheet instead.
  2. Cut the paneer into 1 1/4 inch cubes. Smaller and they dry out before the outside takes any color.
  3. Marinate for 30 minutes only. Paneer does not absorb the way meat does and longer achieves nothing.
  4. Thread with the pepper between the cubes and cook under the hottest broiler, close to the element.
  5. Four minutes a side, and let them char in places. An even golden color means the heat was too low.
  6. Lemon squeezed over the moment they come out, while they are still hissing.
