- Chicken wings1¼ lb
- Butter1¾ oz
- Garlic clovesthree, crushed
- Baking powdertwo teaspoons for the batch

Method

- Dry the wings thoroughly and leave them uncovered in the fridge for a few hours if there is time.
- Toss them in baking powder and salt, about two teaspoons of powder per kilo. Use baking powder and not baking soda, which tastes soapy.
- On a rack over a baking sheet so the fat drips away and the air gets underneath. Sitting in their own fat, the undersides never crisp.
- Twenty minutes at 325F to render the fat out, then 25 minutes at 425F to crisp them.
- The two-stage heat is doing the work. Straight into a hot oven and the skin sets before the fat underneath has gone.
- Melt the butter with the garlic off the heat and toss the wings in it at the very end, with the parsley.
